It differs wildly from team to team. Last year a Pens beat reporter said that when Chicago reporters watched a normal Pens practice they thought the coach was angry because apparently Chicago practices are usually a lot more relaxed.
The players on the ice during optional skates and the players first on the ice during regular practice are usually the guys fighting for ice time, and before that are the guys recovering from injuries.
I read that one advantage of the new Pens UPMC facility is that practice could be held with different players at the same time on two different rinks, but I have no idea how often that will happen or if other teams do that.

I know that the Wild, at least, definitely don't have more than one rink, because one of the issues with carrying three goalies was that Kuemper and Backstrom had to share a net at practice.

I remember hearing that Chicago kept practices light deliberately because otherwise the players were running themselves ragged (Toews was specified).

Yeah, Q usually keeps practices around half an hour tops, and unless he's pissed, the drills are fairly standard, not high-contact or too rigorous. When he's pissed, they do battle drills.
Chicago also is good about giving some of the vets 'maintenance days,' especially when the schedule gets heavy. That most often applied to Hossa and Rozsival, but also sometimes Keith and very occasionally others. The guys are at the rink doing other stuff though - it's not a complete day off.
